Olivo
Especie autóctona de la región mediterránea, oeste de Asia y Macaronesia. El Olivo, de hoja perenne, es un árbol muy longevo que puede a alcanzar los 15 m de altura. Posee un tronco muy característico con una corteza muy agrietada en los ejemplares más viejos.
Su cultivo proviene de tiempos muy remotos y su domesticación se produjo en el este del Mediterráneo aunque también se constata de forma temprana en el Mediterráneo occidental. Este bello árbol está muy extendido en España donde existen numerosas variedades que dan aceitunas (u olivas). De su recolección se obtiene el aceite de oliva que es un ingrediente esencial de la dieta mediterránea, tan apreciada y saludable.
En la mitología romana estaba consagrado a Minerva que aparece en muchos monumentos con una rama de olivo en la mano. Símbolo de la paz, lo era también de la victoria y de la castidad, así los nuevos esposos llevaban en Roma coronas y guirnaldas de olivo, y era también el atributo de los guerreros triunfadores y el premio de los vencedores en los Juegos Olímpicos. En la cultura cristiana, Noé envió a la paloma después del diluvio universal y regresó con una rama de olivo.
